Made this tonight and it was fantastic. I went to two different grocery stores but couldn’t find a can of hominy, so gave up and ordered some dried hominy from Amazon which I cooked with the meat for an hour. I think canned would be better, or maybe I should have pre-soaked the hominy the night before. It definitely was firmer than I expect the canned version would be. However, despite the substitution this is a delicious recipe, my hubby and I ate way too much.
